Ingredients Soaked Brown Rice -150 gms
Olive Oil-1 tablespoon
Pumpkin-1 small piece(150 gms)
Turmeric Powder-1 teaspoonRed chili Powder-1 teaspoon
Cumin powder -1 teaspoon
Coriander Powder-1 teaspoonJuice of 2 lemons
Salt to Taste
1.Cook the Brown rice in pressure cooker or pan with salt to taste and juice of 1 lemon till it become tender.
2.Cut the Pumpkin into medium cubes.
3.Marinate the Pumpkin cubes with olive oil,turmeric powder,red chili powder,cumin powder,coriander powder,salt to taste and lemon juice of 1 lemon and keep it for 10-15 mins
4.Roast the marinated pumpkin in a pan till it become tender with crisp on outer line.
5.Take a plate and add the steamed brown rice into it.add the roasted pumpkin slices into it as shown in the images and your dish is ready.
Tip-The salt and lemon juice added to the rice while steaming will prevent the rice from stickiness.
