Potato and sweet bitter gourd fry (aloo kankada bhaja) is a dish prepared in every homes in Orissa in the summer as sweet bitter gourd are found only in summer.It is one of my favorite dish my mom prepares for me.It is prepared only in five steps and 15 mins.Oriya people always believe in adding less oil and spices to the vegetables.
When i was doing my Post Graduate my friend Sandhya was always asking me about the famous recipes of orisaa.At that time i was unable to define that which Oriya dish is famous and which is not .Here i wish to share one simple of orissa which i think will be liked by people all over India.Below the recipe is written............
Potato(aloo)-4 meduim sized
Sweet bitter gourd(mitha karela)-4 medium sized
Refined Soya Oil-1 tablespoon
Turmeric(haldi) powder-1 teaspoon
Red Chili powder-1 teaspoon
Curry Powder-1 teaspoon
Black mustard seeds(sarso)-1 teaspoon
Salt to taste.
Steps to Prepare
1.Peel the vegetables and cut it into small pieces as shown in the picture.
2.Take a pan or kadhai and keep it in low flame,add oil,when oil get hot add the mustard seeds.
When the mustard seeds gets spluttered add the peeled and cut vegetables.
3.Add the masalas(Indian spices) into the vegetables and fry it for 10 mins in low flame.
4.When the vegetable get tender make the flame little high.
